Need a quick veggie side – Garlic Broccoli in a Flash to the rescue! Even the pickiest of eaters in my house love this quick recipe, and I love how easy and quick it is to prepare.
RECIPE:
1 tsp. olive oil
2 cloves garlic, minced (or about 2 tsp. bottled minced garlic)
4 cups broccoli, cut into florets
¼ c. chicken broth
¼ tsp. salt
Heat the olive oil in a non-stick skillet over medium high heat. Add in the garlic stirring constantly for about 30 seconds. Add the broccoli florets, cook until slightly browned, about 2 minutes. Add chicken broth, cover with a tight fitting lid and cook for 2 minutes. Uncover, sprinkle with salt and serve.
Makes 4-6 servings.
